The crunch behind our burger — forty-eight hours, five spices, finally shared.
Forty-eight hours, five spices, and the crunch that built our burger. After years of refusals, here is the house pickle recipe — scaled for a home kitchen, with the chilli-salt variation for the brave.
What you need
- 1 kg small cucumbers, sliced 5 mm thick.
- 500 ml vinegar, 500 ml water, 60 g salt, 40 g sugar.
- Five spices: mustard seed, coriander seed, dill seed, black peppercorns, one dried chilli.
The 48-hour method
- Salt the slices for one hour, then rinse and pack into clean jars with the spices.
- Boil vinegar, water, salt and sugar; pour hot over the cucumbers and seal.
- Rest 48 hours in the fridge before eating — the crunch peaks on day three.
For the brave: add a spoon of chilli salt per jar, the way the hatch does on Fridays. Keeps three weeks refrigerated — if it lasts that long.
Make them Friday, eat them Sunday. Thank us Monday.
